Feast | What I ate in the West Indies

Petit Peaks Yardbird | turmeric braised chicken, salad with lime coriander dressing, rice and ground provisions, which is steamed breadfruit(left) and dasheen(right). Dasheen is another name for taro root.

Hotel Boucan Chairman’s Rum Punch | so good I made the bartender give me the recipe 25 mL simple syrup, 25 mL lime juice, 50 mL dark rum, nutmeg sprinkle.

Anse Chastenet Coconut Ceviche | red snapper, coconut milk, lemongrass, lime, chili, plantain chips

St Lucian Roti | curried chicken, sweet potato chips, banana raisin chutney

Jack’s Lobster Mac ‘n’ Cheese | when we saw this on the menu, I was NOT expecting this deliciousness.

Lafayette’s Rum Punch | really, really bleeping good. You can order it at the Fig Tree on Bequia, along with a fantastic goat stew that didn’t make it into the picture before I scarfed it down.

THE.BEST.FRIED.CHICKEN.I’VE.EVER.HAD | shatteringly crisp exterior with perfectly tender and moist interior. I actually walked to the kitchen after and personally thanked the cook.

St Vincent local beer Hairoun (pronounced hi -ruin) and a BBC (Bailey’s Banana Coconut)
